Bacteria found on Franz Josef Land may help create Russian starter cultures for dairy products

Scientists participating in the "Arctic Floating University — 2025" expedition collected samples in the territories of the Novaya Zemlya and Franz Josef Land archipelagos. A total of about a hundred samples were collected, which will be examined for the presence of new types of lactic acid bacteria.

Arctic lactic acid bacteria remain poorly studied, but their species have significant potential for developing new starter cultures that could be used in the domestic dairy industry.

Lactic acid bacteria are found in a variety of conditions. Initially, researchers studied the feces of mammals and birds, as their digestive tract is a rich source of these microorganisms. In addition, lactic acid bacteria have been found in soil, on plants, in water, and even in snow on icebergs.

The cultures of microorganisms isolated during the study can be used to develop probiotics, including veterinary ones. In addition, studying lactic acid bacteria living in the intestines of Arctic animals and birds will help to better understand their biology.

The research vessel "Professor Molchanov" was built in 1983 at a Finnish shipyard. The ship was named after the outstanding Russian and Soviet scientist Pavel Molchanov, a specialist in meteorology. Molchanov is known as the creator and first tester of the radiosonde, the world's first device for measuring atmospheric parameters with subsequent data transmission via radio channel.
