Scientists from Voronezh State University of Engineering Technologies (VSUIT) have patented a multifunctional unit for cooking meat, fish, mushrooms, and even bread with smoking. The device combines the functions of a grill, oven, and smoker – all in one compact appliance.
The secret of the development lies in its well-thought-out design. The main part is made of ceramics, which ensures even heating and retains heat for a long time. Inside, there is a removable screen that reflects heat and creates a coaxial channel (i.e., "pipe in pipe") for hot air circulation. Thanks to this, food is cooked evenly from all sides.
For smoking, a special tray with a grate for sawdust is installed in the lower part. Smoke rises, enveloping the meat and fish, and excess fat drains into special trays – it does not drip onto the coals and does not cause bitterness. The upper part of the screen has a concavity, forming a small bowl – it can be used as a container for additional heating or boiling.
An important feature: the device provides perforated annular shelves and grates where products can be loaded in portions. This allows you to cook shashlik, lula kebab, sausages, mushrooms, bake – and smoke at the same time.
The design also includes an ash pan with a door for draft regulation, an ash collector for ash, and a fat collection system. All this makes the device convenient and safe. The development can be useful both in households and in the catering sector – for cafes, restaurants, catering, where a reliable and multifunctional oven is needed.
