An innovative edible coating for food packaging has been created at St. Petersburg State University (SPbSU). It extends the shelf life of products and has antibacterial properties, according to the university's press service.
We have created a cross-linked system that does not fall apart and has good mechanical properties. The developed coating is more resistant to moisture, it is not so easy to remove, and it is more environmentally friendly.
The coating consists of gelatin and chitosan. It can be applied to fruits, vegetables, meat, and fish. The novelty does not change the taste or appearance of the products, and most importantly, it extends their shelf life by 1.5 times.
The coating is easily washed off with water. If this does not happen, there will be no negative consequences. It is biocompatible with the human body.
