Experts: Fully Entrusting Food Preparation to AI is a Rash Step

Approximately 37% of Russians have expressed a desire to try dishes prepared by a robot, foregoing traditional food from chefs. The remaining 63% continue to prefer classic culinary methods. These data were released by Leonid Dovbenko, co-founder of the DocsInBox service, commenting on the attitude of Russians towards the introduction of artificial intelligence in the restaurant sector.

The expert notes that distrust of robotic chefs is due to the fact that, despite technological progress, artificial intelligence has not yet mastered all the nuances regarding the taste, texture, and presentation of dishes.

At the same time, business is actively introducing artificial intelligence into various processes. A prime example is the Starbucks coffee chain, which in 2025 introduced its own AI system. This technology significantly accelerated the inventory counting process, reducing the time from an hour to 15 minutes. An employee, using a tablet, scans the shelves, after which the system instantly determines the balances and reports on the shortage of goods.

Boris Gern, AI Lead at Dodo Brands, is confident that artificial intelligence can help chefs create new combinations of ingredients and recipes, but it will not be able to replace the creative approach of a human.

AI can suggest new combinations of ingredients, as we did with GPT-pizza in Dubai, but the final creative decision, understanding of the cultural context, and creation of a gastronomic experience will remain with the human.
